Country Apple Cake with Cardamom Apple Compote

Everyone should have a go-to cake that never fails and makes everyone happy.  Something you can bring to a dinner party or a new mom. Something that your family asks you to make over and over again.  I like to mix it up, but this one is a favorite.  The oil and sugar cook in the bundt pan to make a crisp outer crust for the cake, while the apples and the cake stay crazy moist.  It's great on its own but what isn't made better with a scoop of ice cream and some carmelized apples with flavors of cinnamon and cardamom.  Nothing!  I tried to make an apple cider ice cream... that was a disaster!  Never again. Sticking with old faithful.



2 cups sugar

1 1/2 cups canola or sunflower oil

2 tsp lemon juice

1 tsp salt

2 tsp lemon juice

2 eggs


3 cups flour

1 1/4 tsp baking soda


3 cups peeled and large diced apples (I like honeycrisp)



2 cups peeled and diced apples

3 tbsp brown sugar

2 tbsp butter

1/2 tsp cinnamon (or to taste)

1/2 tsp cardamom


Preheat oven to 325 degrees. Grease and flour a bundt pan.  


Combine sugar, oil, vanilla, eggs, lemon juice and salt in bowl.  Mix well.

Mix flour and baking soda and add to the first mixture and mix well.

Add apples and mix again.

Pour into prepared pan.  


Bake 70 minutes or until top of pan is golden brown and toothpick comes out clean.

Wait a few minutes and unfold onto a cooking rack.  I like to hold my cake shaped on over the top and flip it.  I love that this one always pops right out!

Wait until it's completely cooled to cut it... if you can wait.
